Greens with Bacon

Ingredients

250g sliced red onions or leeks
1 Tbsp butter
100g bacon, sliced
½ cabbage, sliced
1 bunch kale, sliced
salt and pepper

Directions

Briefly cook cabbage and kale in salted boiling water. Cook onion and bacon in a large frying pan until crispy. Add the kale and cabbage and toss over heat for about a minute adding salt and pepper to taste. Serve right away!

We've been able to try vegetables that aren't always available in supermarkets which has enabled us to enjoy more interesting weeknight dinners!
