Parsnip, Apple, Onion Soup

Ingredients

2 cups broth
4 parsnips, sliced
4 apples, sliced
1 onion, chopped
5-6 cloves garlic, peeled
Salt and Cracked Pepper to taste

Directions

Preheat oven to 350 degrees Fahrenheit. Roast all veggies on a tray with olive oil/ coconut oil until fork tender. When done, blend all veggies with broth in a food processor or blender. Blend until creamy. Quick, simple, and delicious! Happy Eatings!

We've been able to try vegetables that aren't always available in supermarkets which has enabled us to enjoy more interesting weeknight dinners!
