Spinach and Rice Pilaf

Ingredients

1 onion, diced
1 carrot, diced
3 cloves garlic, minced
¼ c pinenuts or slivered almonds
2 c cooked rice
4 T butter
4 T olive oil
½ c heavy cream
4 c water or vegetable broth
2 or 3 handfuls spinach
salt and pepper to taste

Directions

Saute onion, carrot, garlic, nuts and rice in butter and olive oil until lightly brown. Add cream and simmer 2 or 3 minutes. Add spinach, water or broth and season to taste. Cover and simmer until liquid is absorbed, about 15 minutes.

We've been able to try vegetables that aren't always available in supermarkets which has enabled us to enjoy more interesting weeknight dinners!
